Cypress Grove Cheese began when Mary Keehn, a self proclaimed "serious hippie" and single mother of four desired healthy milk for her family. Mary noticed her neighbor had goats for brush control and asked if she could buy two of them.
With a grin, her neighbor replied, "Honey, if you can catch 'em, you can have 'em." So a determined Mary went out with grain each day and eventually lured her first two goats! And as most farm stories go, two goats soon turned to four and so on.
A lot of goats means a lot of milk, so Mary's next journey was trying to make cheese!
The doors of Cypress Grove officially opened in 1983. Mary traveled to France to taste and learn from the masters and makers of brie, camembert, morbier, and more!
Full of great cheese and inspiring ideas, Mary returned home eager to share her experiences with the world!
Cypress Grove built their dairy in 2010 and is managed with the health and happiness of their herd in mind. But don't take my word for it; the American Humane Association endorsed Cypress Grove model dairy as Humane Certified with 100 percent score not one, not two, but three years running!
Midnight Moon, a cheese known to convert even the staunchest of goat cheese critics, is a blushing, ivory-colored goat cheese that's nutty and brown buttery, with a long caramel finish.
Similar to Gouda, as Midnight Moon ages, protein crystals form and lend a slight crunch to the otherwise dense and smooth cheese.
This award-winning aged goat milk cheese made exclusively for Cypress Grove in Holland pairs deliciously with a fig jam and some crispy crackers or bread!
