Cheese of the Week: Parrano

The Parrano collection consists of two wonderfully smooth and creamy cheeses, the Parrano Originale and the Parrano Truffle.

The Parrano Originale is a blending of the smooth, creamy texture of a Gouda with the nutty flavors of a Parmesan. Full of flavor yet still approachable, this cheese is perfect for your culinary imaginations! This cheese pairs well with fig jam, prosciutto, roasted peppers, marinated artichokes, truly an endless list. Personally, I could taste a wonderful combo with a crisp lager!

Similar to the Parrano Originale, the Parrano Truffle is a blending of creamy Gouda and nutty Parmesan with layers of rich flavors of Italian Black Truffles. The adding of the decadent earthy umami flavors of black truffle makes this cheese sure to be the first finished off your plate! Parrano Truffle pairs well with honey, walnuts, focaccia bread, and an earthy Malbec or refreshing Kolsch beer.

Produced in northern Holland, Parrano was created in the early 1970's. Inspiration for the cheese came after a trip to Italy by one of the cheese Masters at Uniekaas, the oldest cheese brand of the Netherlands.

After returning to the Netherlands, he decided to experiment by blending his traditional Dutch Gouda recipe with the style of northern Italian cheeses he had tasted on his trip.

Named after a small Umbrian village, the recipe for Parrano remains relatively unchanged since the beginning of its journey forty years ago!

Quick fact: Parrano is a Proosdij cheese, which means it is a frim style of washed curd cheese, made very similarly to Gouda, using specific combinations of mixed-strain starter cultures. The cheese develops aroma, flavor, and texture profiles with characteristics between Gouda and Parmesan cheeses.
